#Asparagus #Cucumber and #Peas #Soup
This is turned out to be a gorgeous light soup for the surprisingly warm #september evening
250g asparagus chopped (reserve tips)
1 tablespoon #coconutoil
5 small spring onions
2 #celery sticks finely chopped
250g #leeks, finely sliced
1 clove #garlic, finely chopped
3/4 cucumber diced
250g fresh peas
750ml vegetable stock
3 tablespoon #chives snipped
Sprinkle mixed #herbs #parsley #thyme, #rosemary #coriander
1 dessert spoon #mintleaves
Place the asparagus tips in a little warm water steam for 3 minutes and leave to one side.
Place coconut oil in a saucepan, add spring onions leeks and garlic then cook gently for 5 minutes without browning.
Add the chopped asparagus, celery cucumber and peas then cook for 2 minutes
Add the stock rapidly bring to the boil, then cover and simmer for 5-7 minutes until the vegetables are tender but retain their colour.
Blend until smooth
Add the chopped herbs and asparagus tips, then season to taste serve immediately.
